Carolina Style BBQ Sauce Recipe

There are difference in flavors of Carolina Style BBQ Sauce Recipe based on where you are (North Carolina, South Carolina, and even within the states there are bbq flavor varieties such as "Eastern" or "Western"!). Vinegar-based and tomato-based are the most commonly found. There are also mustard and pepper varieties. Some are more sweet while others have a tangy flavor.

Vinegar-Based Carolina Style BBQ Sauce Recipe


Ingredients


.                      1 cup white vinegar

.                      1 cup cider vinegar

.                      1 tablespoon brown sugar

.                      1 tablespoon cayenne pepper

.                      1 tablespoon hot pepper sauce (e.g. Tabasco™), or to taste

.                      1 teaspoon salt

.                      1 teaspoon ground black pepper

Directions


Combine the white vinegar, cider vinegar, brown sugar, cayenne pepper, hot pepper sauce, salt and pepper in a jar or bottle with a tight-fitting lid. Refrigerate for 1 to 2 days before using so that the flavors will blend. Shake occasionally, and store for up to 2 months in the refrigerator.

 

Mustard-Based Carolina Style BBQ Sauce Recipe


Ingredients



  • 1 1/2 cups prepared yellow mustard (French's)

  • 1/2 cup light brown sugar, packed

  • 1/2 cup tomato paste

  • 5 tablespoons apple cider vinegar

  • 1 tablespoon Worcestershire sauce

  • 1/2 teaspoon cayenne pepper (can adjust to desired heat level)

  • 1/2 teaspoon fresh ground black pepper

  • 1/2 teaspoon garlic powder

Directions


Firstly, you have to combine all ingredients in a saucepan & whisk over medium heat. Once the sauce is simmering, whisk until the sugar dissolves completely. This should take 5 minutes or less. Do not overcook! (sauce requires less time simmering if sugar substitue is used). Remove from heat and cool before using. You need to store sauce in a sterilized GLASS jar in the refrigerator between uses. (I sterilize a suitable empty BBQ sauce bottle by capping with 1/2 cup of cider vinegar inside it, swirling it by shaking several times over a few days, & then draining well when ready to fill with BBQ sauce.). Optional: in place of the light brown sugar, use 1/2 cup of sugar substitute + 1T molasses.  The sugar substitute version (which I now keep on hand) is diabetic friendly & easier to adapt to sugar substitute than most tomato based sauces I have attempted to modify & encountered consistency problems. Tomato-Based Carolina Style BBQ Sauce Recipe


Ingredients



  • ½ gallon ketchup

  • 2 ½ cups apple cider vinegar

  • 1 ½ cups Worcestershire sauce

  • 1 ½ cups water

  • 2 cups sugar

  • 4 cups dark brown sugar

  • ¼ teaspoon salt

  • ½ cup yellow mustard

  • 1/3 cup vegetable oil

  • 3 tablespoons chili powder

  • 3 tablespoons paprika

  • 2 tablespoons black pepper


Direction


Combine the ketchup, cider vinegar, Worcestershire and water. Bring to a simmer to assist in dissolving the sugars. Combine the remaining ingredients and add to the mixture. Simmer for 15 to 2 minutes over low heat. Let cool and hold for service at room temperature. Or, the sauce can be stored in an airtight container and refrigerated to use later.
