BBQ Baby Octopus Recipe

Basic BBQ Baby Octopus Recipe

A favorite of many, great octopus can often elude even the most diligent of cooks. Follow this recipe and discover how great ingredients and long marinating results in the tenderest of octopus.


INGREDIENTS



  • 800gm baby octopus

  • 1 bunch Italian parsley (chopped)

  • 3 lemons

  • 2 limes

  • 2 oranges

  • 2 cloves of Garlic

  • 3 red chillies

  • 100 ml olive oil

  • 100 ml sweet chilli sauce



DIRECTIONS

For the marinade take the stalks from the parsley, finely chopped garlic, juice from one lemon and ½ of the olive oil. Combine all in a bowl. Clean the octopus by removing the ink sack from the head and the beak from the base of the head. (If you have a great relationship with your fishmonger they may already have done this for you)
Toss the octopus through the marinade, cover and refrigerate for up to 24 hours (if possible) This allows the flavors of the garlic and lemon to enter the flesh of the octopus as well as tenderizing.On the day of cooking segment the remaining citrus fruit reserving the juice.
Take the juice, sweet chilli sauce and the remaining olive oil and whisk together. The amount of chilli sauce will vary according to individual taste so don't add it all straight away.
Throw in chopped coriander and season with fresh ground black pepper.
Sear the octopus on the BBQ until just cooked, toss the octopus in a little of the dressing and arrange in the center of the plates. Toss the citrus segments throughout the remainder of the dressing and drizzle over and around the plate.
Garnish with parsley and ENJOY…Tips:


  • Always try to buy the octopus the day before you need it as it is always better after a good 24 hours in the marinade.

  • Always ask your fishmonger to tenderize your octopus.

  • Prep and marinate to octopus the day before cutting preparation time and producing the tenders of octopus.

  • Any leftover dressing can be stored for up to a week in the fridge to be used on all fresh salads.

BBQ Fillet Mignon Roast Recipe

This is my absolute favorite filet mignon dish to serve for a special occasion, such as Christmas or a birthday celebration. This cut of meat is so tender and it goes so well with any side. Most importantly, once you season and prepare the meat, there is very little “cooking” left so you can stay out of the kitchen and enjoy the celebration.

Make a point to buy top quality meat and to request a “BBQ Fillet Mignon Roast Recipe” with your butcher early enough because they may not have that cut of meat on location. I generally try to order a 1/2 lb of meat per person (or more if I want any leftovers).

Before cooking the BBQ Fillet Mignon Roast Recipe, bring to room temperature.

Preheat your oven to 475 degrees. In a large roasting pan, place the BBQ Fillet Mignon Roast Recipe fat side up, and rub olive oil over the meat. Generously season with kosher salt, pepper, and about a tablespoon of thyme. Place in the oven for about 12-15 minutes for 2-3 pound roast or 15-20 minutes for 4-5 pound roast. Reduce heat to 350 and cook an additional 20-25 minutes. Use a meat thermometer to determine when it is done to suit your taste (125 for rare and 135 for medium). Remove meat from oven and let stand (covered with aluminum foil) about 15 minutes before serving.

Serve with mushroom sauce (recipe below).

Mushroom Sauce
In a large skillet, on medium-high heat, melt:
2 tablespoons butter
Once butter is melted, add to the pan:
10 oz of coarsely chopped mushrooms
2 garlic cloves, minced
1 teaspoon onion powder
Cook until most of moisture from mushrooms is gone. Add to the pan:
*1/2 cup red wine
Cook until most of liquid is gone. Reduce heat and add:
1/2 cup beef broth
3-4 tablespoons pan drippings
Whisk until combined and serve over meat.

Basic Best BBQ Snapper Fillets Recipe

Ingredients

  • 1 1/2 lb

  • red snapper or cod fillets

  • 1/2 to 3/4 inch thick


Directions
Lemon or Garlic Butter

Cut red snapper fillets into 6 serving pieces. Cover and grill fish about 4 inches from medium coals, turning and brushing occasionally with one of the flavored butters, until fish flakes easily with fork, 15-25 minutes. 6 servings.MICROWAVE DIRECTIONS: Cut red snapper fillets into 6 serving pieces. Place butter for one of the flavored butters in square microwaveable dish, 8 x 8 x 2 inches. Cover tightly and microwave on high until butter is melted, 30-60 seconds. Stir in remaining ingredients for flavored butter. Add fish, turning to coat well. Cover tightly and microwave until fish flakes easily with fork, 3-5 minutes longer. Let stand covered 3 minutes.


LEMON BUTTER:

2 tbsp. butter, melted
1 tbsp. lemon juice
1/2 tsp. grated lemon peel
1/2 tsp. Worcestershire sauce

Mix all ingredients.

GARLIC BUTTER:

2 tbsp. butter, softened
1/2 tsp. paprika
1/2 tsp. dried oregano leaves
1 clove garlic, crushed
Dash of freshly ground pepper

Basic BBQ Recipe For Ribs


Ingredients



  • 4 pounds baby back pork ribs

  • 4 cloves garlic, sliced

  • 1 tablespoon white sugar

  • 1 tablespoon paprika

  • 2 teaspoons salt

  • 2 teaspoons ground black pepper

  • 2 teaspoons chili powder

  • 2 teaspoons ground cumin

  • 1/2 cup dark brown sugar

  • 1/2 cup cider vinegar

  • 1/2 cup ketchup

  • 1/4 cup chili sauce

  • 1/4 cup Worcestershire sauce

  • 1 tablespoon lemon juice

  • 2 tablespoons onion, chopped

  • 1/2 teaspoon dry mustard

  • 1 clove crushed garlic




Directions to make BBQ Recipe For Ribs



  1. Preheat oven to 300 degrees F (150 degrees C). Place ribs on a rack in a shallow roasting pan. Scatter 4 cloves of sliced garlic over ribs. Cover, and bake for 2 1/2 hours. Cool slightly.

  2. In a small bowl, mix together white sugar, paprika, salt, black pepper, chili powder, and ground cumin. Rub spices over cooled ribs. Cover, and refrigerate overnight.

  3. In a small saucepan, mix together brown sugar, cider vinegar, ketchup, chili sauce, Worcestershire sauce, lemon juice, onion, dry mustard, and 1 clove garlic. Simmer over medium-low heat, uncovered, for 1 hour. Reserve a small amount for basting; the remainder is a dipping sauce.

  4. Preheat grill for medium heat.

  5. Place ribs on grill. Grill, covered, for about 12 minutes, basting with the reserved sauce, until nicely browned and glazed. Serve with remaining sauce for dipping.

  • 1 small onion, chopped

  • 7 cloves garlic

  • 1/2 cup olive oil

  • 1/2 cup vinegar

  • 1/2 cup soy sauce

  • 2 tablespoons chopped fresh rosemary

  • 2 tablespoons Dijon-style prepared mustard

  • 1 (2 pound) tri-tip steak




Directions

Ingredients



  • 16 to 30 clams in shells, suitable for steaming

  • 1 baguette (8 oz.), sliced

  • 2 1/2 to 5 tablespoons butter or margarine, melted


Directions



  • 1. Scrub clams under cool running water. Discard any gaping clams that don't close when cleaned.

  • 2. Place a bowl with clams, a basket with baguette slices, small forks, and napkins alongside barbecue grill. Place butter in a small pan on a cool section of grill.

  • 3. Have guests set clams on grill over a solid bed of hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill.

  • 4. Cook clams until they pop wide open, 6 to 8 minutes. Pick up clams, using tongs or napkins to protect fingers, drain juices into butter, then pluck clams from shells, dip in butter, and eat.

  • 5. When all the clams are cooked, dip bread into butter.

Ingredients



  • 1 cup vegetable oil

  • 1/2 cup distilled white vinegar

  • 2 cloves garlic, minced

  • 1 tablespoon salt

  • 1/2 teaspoon ground black pepper, or to taste

  • 1 (3 pound) boneless leg of lamb, trimmed of fat


  • 1/2 cup water

  • 1/2 cup lemon juice

  • 3/4 cup vegetable oil

  • 2 1/2 cups tomato puree

  • 2 cups chopped onion

  • 2 tablespoons distilled white vinegar

  • 2 teaspoons hot pepper sauce (e.g. Tabasco™)

  • 1 teaspoon minced hot green chile peppers

  • 2 cloves garlic, minced

  • 1 tablespoon dry mustard powder

  • 1 teaspoon salt




Directions



  1. Whisk together 1 cup of vegetable oil, 1/2 cups of vinegar, 2 cloves minced garlic, 1 tablespoon salt, and black pepper in a bowl; pour into a resealable plastic bag. Add the trimmed lamb leg, coat with the marinade, squeeze out excess air, and seal the bag. Marinate at room temperature for 2 hours.

  2. Meanwhile, stir together the water, lemon juice, 3/4 cup of vegetable oil, tomato puree, onion, 2 tablespoons of vinegar, hot sauce, minced chile, 2 cloves minced garlic, mustard powder, and 1 teaspoon of salt in a large saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low, and simmer 30 minutes until the onions have softened and the sauce has thickened.

  3. Preheat an outdoor grill for medium-low heat, and lightly oil grate.

  4. Remove lamb from marinade, and shake off excess. Discard remaining marinade. Cook on the preheated grill 1 1/2 to 2 hours, turning and basting frequently with the hot barbeque sauce.

  • 2 cloves garlic, crushed

  • 1/4 cup tomato-based chili sauce

  • 1 lemon, juiced

  • 1 teaspoon dried oregano

  • 2 pounds peeled and deveined medium shrimp

  • 16 skewers

  1. Whisk together the canola oil, hot pepper sauce, garlic, chili sauce, lemon juice, and oregano in a large glass or ceramic bowl. Add the shrimp and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator 1 hour.

  2. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

  3. Remove the shrimp from the marinade, and shake off excess. Discard the remaining marinade. Thread about 4 shrimp onto each skewer.

Basic Rib Eye Recipe BBQ


Ingredients



  • 2 (10 ounce) marbled beef rib-eye steaks

  • 2 teaspoons garlic powder, or to taste

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 2 (12 fluid ounce) cans cola-flavored carbonated beverage

  • 2 cups barbeque sauce

  • 8 slices bacon

  1. Score steaks on both sides in a diamond pattern using a sharp knife. Punch the fatty areas with the tip of the knife. Sprinkle a thin coating of garlic powder over both sides of the steaks, then sprinkle with salt and pepper. Rub to get the seasoning into all of the scores.

  2. Place steaks in a shallow dish, and pour the cola over them. Cover, and marinate in the refrigerator for 4 hours, turning steaks over every hour or so. During the last hour, coat the steaks with a thin layer of barbeque sauce.

  3. Preheat an outdoor grill for high heat.

  4. Lightly oil the grilling surface. Place steaks on the grill over high heat, and cook until almost burnt on each side, about 4 minutes per side. Reduce the grill's heat to medium-low, or move steaks to a cooler part, and place the bacon strips on top of them. Cover, and slow cook for 10 minutes per side.

  5. Spread a thin layer of barbeque sauce over the steaks during the last few minutes of cooking, and allow it to cook until dry for a glazed effect.

Combine all the rub ingredients in a small bowl.

Place peppers, garlic, pine nuts, cilantro and cheese in afood processor and process until combined. With the motor running, add the oil and process until emulsified and season with salt and pepper, to taste.

Heat grill to high. Brush each fillet on both sides with oil. Rub 1 side of each fillet with 1 tablespoon of the barbecue rib and place on the grill rub side down and cook until slightly charred and a crust has formed, about 2 to 3 minutes. Turn the fish over and grill for 3 to 4 minutes longer or until cooked to medium doneness. Top each fillet with a few tablespoons of the pesto and garnish with cilantro leaves.
