Salt Lick BBQ Sauce Recipe

Basic Salt Lick BBQ Sauce Recipe


Ingredients



  • 8 to 10 pound grain-fed beef brisket (recommended: Angus beef)

  • 3 tablespoons dry rub (recommended: Salt Lick dry rub)

  • Barbecue sauce (recommended: Salt Lick BBQ sauce)


Directions




Dry brisket with a clean cloth. Evenly spread the dry rub over the entire outside of the brisket. Rub in lightly and dust off any excess. Start a fire in your grill using oak, other hard woods, or oak charcoal. Do not use mesquite in any form. Once the fire has reached the stage where you can hold your hand about 1-inch over the grill to a count of 4, place the brisket fat side down above the coals. Leave for 5 to 10 minutes or until caramelization begins. Turn brisket over and repeat process. Remove from fire. The purpose of this procedure is to set the spices into the meat so that they will not wash off during the cooking process.

 

Place the brisket on an open grill away from the coals and maintain a temperature to where you can hold your hand over it to a count of 12 or place in a closed smoker away from the coals at a temperature of 210 degrees F. Cook for 14 hours or until the internal temperature reaches 160 degrees F.

Basic BBQ Rib Mop Sauce Recipe

For the mop sauce

  • 1 1/2 cups cider vinegar

  • 2 cups apple cider

  • 2 bay leaves

  • 4 cloves garlic, finely minced

  • 3 tablespoons hot sauce

  • 1 tablespoon salt

  • 3/4 cup BBQ Rub, recipe follows


For the rub

  • 1/4 cup paprika

  • 1/4 cup dark brown sugar

  • 2 tablespoons black pepper

  • 1 tablespoon salt

  • 1 tablespoon celery salt

  • 2 teaspoons garlic powder

  • 2 teaspoons dry mustard

  • 2 teaspoons cumin

  • 1 teaspoon cayenne pepper


Preparing the ribs - Wash the ribs and blot dry with paper towel. Place the ribs meat-side up. Cut the line of fat on the base of the ribs to remove the cartilaginous rib tips. Flip the meat over and cut off the flap of meat on the inside of the ribs. This is not essentially but will help prevent them from burning. Remove the membrane on the back of each rack of ribs. You can use your fingers to pull it off but sometimes it’s easier to use a paper towel or a dishtowel to get a secure grip.

Combine the ingredients for the rub and mix well. Liberally rub the ribs on both sides with the mixture. Wrap each rib in plastic wrap then aluminum foil and let marinate for at least 4 hours, but over night is best.

Preparing the smoker – Presoak your wood chips in water for roughly an hour. Place a drip pan in the center of your smoker with plenty of water. A charcoal chimney is best to get your coals started. Once you have hot coals spread them out and put a health amount of your chips down.

Smoking the ribs – Place aluminum foil on the rack before placing the ribs down and another loose piece on top of the ribs. Place the ribs on the smoker over the drip pan and cover the smoker. Start basting with the mop sauce after 30 minutes, basting every 20-30 minutes. You will need to replenish the coals and wood chips form time to time as needed. The ribs are done when the meat is very tender and it has shrunk back from the ends of the bones. At temperatures ranging from 200-250 your ribs should take roughly 4-5 hours however every smoker is different.

Firstly, you have to combine all ingredients in a saucepan & whisk over medium heat. Once the sauce is simmering, whisk until the sugar dissolves completely. This should take 5 minutes or less. Ingredients



  • ½ gallon ketchup

  • 2 ½ cups apple cider vinegar

  • 1 ½ cups Worcestershire sauce

1/2 Bottle of Low or No Sugar Ketchup
Splash of Liquid Smoke
1/4 Cup of Splenda
3 Tbsp of Worcestershire Sauce
2 Cloves of Garlic or 4 tsp of Powered
1 tsp of Salt
1 tsp of Pepper
1 tsp of White Pepper

The carb count of the ingredients is as follows; Ketchup: 72 Carbs. Liquid Smoke: 0 Carbs. Splenda: 6.25 Carbs. Worcestershire Sauce: 6.5 Carbs. Garlic: Less than 1 carb in 1 clove.

 

Instructions


In a sauce pan, combine the following in this order:

  1. 1/2 bottle of no sugar ketchup

  2. Splash of liquid smoke

  3. 3 Tbsp of the Worcestershire sauce


The burner should be turned on to a medium heat. Mix the liquid ingredients. Let this cook for 5 minutes, stirring frequently. Add the following powered ingredients in this order, stir after each ingredient is added:

  1. 1/4 cup Splenda

  2. Garlic

  3. Salt

  4. Pepper

  5. White Pepper


Stir well. After 5 minutes, turn the stove to medium high. While continuing to stir, allow the BBQ sauce to start to boil. Before the boiling becomes rapid, turn the stove to low heat.
